Ready cooked and in salted water, borlotti beans are lovely looking beans. With a little vinegar and some Lupa extra virgin olive oil they are a delicious accompaniment to fish and meat dishes. Also great as a main ingredient for vegetarian and vegan meals and sporty salads, since they offer a high protein content. They also contain a large amount of carbohydrates, fibre, beta carotene and vitamins from the B group – especially folic acid. All in all a healthy choice!
